This bottling is always an interesting one. The base whisky is malt distilled at Chichibu by Akuto-
san, but is blended with whiskies from Canada, Ireland, Scotland, and the USA. Akuto-san tastes
barrels in each location, selecting whiskies at least 3-5 years old, and then ships the barrels to
Japan for further aging at Chichibu before blending the whiskies together. It’s not your average
blended whisky—this can’t be compared to something like Suntory Toki or Nikka Days; those
are intended for mixing, whereas this dram rewards contemplation.
We find a lot of fruit on the nose—stonefruits, unripe apricots, some light toasted hazelnuts, with
a soft citrus backbone. The palate is fantastic: rich and spicy, lean without being watery, direct
and well-composed. Some mild sweetness opens up with a small dash of water. It’s fun to taste
through this and try to imagine the various component whiskies—rye from Canada, corn from
the USA, unmalted barley from Ireland. It’s all drawn together expertly, a true example of
wakon yosai.
