Sotol is a curious category--it's definitively NOT mezcal, but it's similar. It's specific to the Mexican state of Chihuahua and produced from the sotol plant, also known as the Desert Spoon plant. Although it looks and behaves much like an agave plant, it's actually related to asparagus! This producer typically harvests at about 18-22 years of age, roasts in a shallow pit oven before a week-long fermentation in oak vats. This bottling is a great introduction to the sotol category, showcasing bright green pepper notes with a soft herbaceousness. Try this on its own or in a Paloma!
