The original, classic Maker’s Mark is a lovely bourbon: wheat-forward, soft and sweet with just
a touch of spice. For decades Maker’s Mark only ever made Maker’s Mark; but in recent years
the distillery has expanded their offerings, focusing on the incredibly wide world of wood
science. This Private Selection, created specifically for Knightsbridge, began with the classic
Maker’s Mark recipe: a wheated bourbon mash was distilled and aged in new, charred, white
oak casks. When the spirit had reached maturity, the cask was pulled from the rickhouse and
the barrelhead was removed. A special, nonreactive ring was fitted with 10 “finishing staves”
and placed into the barrel, and the barrel head was replaced. The cask was then returned to the
rickhouse to continue aging for another 3 long months, before being pulled, dumped, and
bottled at cask strength.
Those special finishing staves add nuance and dimension to the whiskey, creating a final flavor
profile that’s unique to this particular selection.
- Seared French Cuvée staves are Limousin oak staves which have been cooked with infrared heat, as opposed to radiant heat or direct fire. This process imparts toasty,caramel notes to the oak.
- Toasted French Spice staves are Limousin oak staves which have been cooked at both high and low temperatures in a convection oven, using radiant heat. This produces spice notes, light smoke, and a touch of vanilla.
- Roasted French Mendiant staves are named after a classic French pastry made with chocolate, dried fruit and nuts; the staves themselves are Limousin oak staves which have been cooked for a long time at lower temperatures, resulting in notes of chocolate and fruit.
Clocking in at a very respectable 54.4% alcohol by volume, this dram is perfectly drinkable on its
own—but a little water won’t hurt it and ice can’t scare it. The higher proof also helps this
whiskey show up exceedingly well in cocktails,
