Jean-Marc Sélèque's Champagnes are exciting! His work, focused on small production with a focus on detail, was formed during stints working for some larger sparkling producers in California and Australia. Because of a philosophy that encouraged volume he witnessed all sorts of 'corrections' (that were likely necessary) in their cellars. Knowing that this is not a way to make tip top sparkling wine Jean-Marc knew that his philosophy would be exactly the opposite. His wines would be made in a labor intensive way with decisions made by how it would improve quality. Jean-Marc dedicated himself to plowing by horse, lower yields, a combination of organic and biodynamic techniques in the vineyards. In his cellars he welcomed long, wild fermentations, long aging on the lees, and in bottle after the second fermentation.
Quintette is Jean-Marc’s Blanc de Blancs, a Chardonnay from five mature sites.
