Collazzi - Toscana IGT 2018
The Collazzi Estate's vineyards, located in the municipality of Impruneta (Florence), boast clayey-calcareous soil rich in fossils and excellent drainage. With an average vineyard age of 20 years, the microclimate is warmer and drier than the surrounding areas. The property, positioned in a natural amphitheater with optimal south-west exposure, receives abundant sunshine and experiences mild daytime temperatures. These conditions ensure a prolonged and consistent ripening of the grapes year after year.
The vinification, ageing, and refinement processes involve a manual harvest with the vineyards situated within a 400-meters of the cellar. Harvested parcels and grape varieties undergo separate vinification, with careful selection on a sorting table. The blend of 46% Cabernet Sauvignon, 40% Cabernet Franc, 9% Merlot, and 5% Petit Verdot, occurs at a controlled temperature of about 25°C in stainless steel, followed by malolactic fermentation. The wine matures for 18 months in barrels, with an additional 6 months in bottles.
