Sixth generation Rodolphe Petérs runs the show at Pierre Peters, a grower-producer in the heart of the Côte des Blancs in the heralded village of Les Mesnil Sur Oger. The village earned its Grand Cru status in 1919 (far later than it should've been) off the reputation of their exquisite Chardonnay. Rodolphe also pulls impeccible Chardonnay from his other estate vineyards in Oger, Cramant, and Avize. All Grand Cru, these four villages, are the base of this wine which Rodolphe calls his "flagship wine" the Cuvée de Réserve.The Cuvée de Réserve is always all Grand Cru Chardonnay.
Known for its steely minerality and ripping acidity this Champagne does go through partial malolactic fermentation and he uses relatively high fermentation temperatures to "tame the beast" [acidity], but this certainly doesn't take away from their signature power, and even ageability.
