François Huré recently visited us to share the story behind his family’s Champagnes, offering a glimpse into their meticulous craft and distinctive style. The Huré family’s vineyards are rooted in the Montagne de Reims, with vines in Ludes, Villedommange, and Vavray-le-Grand averaging 35 years of age. These sites are farmed organically, with limited tilling, no herbicides, and the use of organic composts to preserve the vitality of the terroir. Their wines are crafted with an extra brut dosage of 3-4g/L, showcasing the purity of their fruit. Reserve wines started in 1982 are kept in oak barrel soleras, add depth and character to their bottlings.
One such bottling, the "Invitation," is described by François as “a postcard from home.” This Champagne is a blend of 40% Pinot Noir, 40% Pinot Meunier, and 20% Chardonnay, with 25%-40% reserve wine (in stainless) included. It undergoes separate vinification of villages, varieties, and parcels, followed by primary aging in tanks (92%) and barrels (8%). Partial malolactic fermentation contributes to its balance, while three years of aging on lattes enhance its complexity.
