In Burgundy we often hear about and taste wines from cool vineyards. Cool vs warm or hot is easy to understand as there are so many ways to quantify it. Temperatures, sunshine hours etc. However, the concept is one that is tougher to see.
A perfect visual example of a cool vineyard exists in the photo above. On the January of 2017 we were able to view from the top of the vineyard "Les Barreaux," a village level vineyard seen in the foreground. You can see it covered in snow while the vineyard across the road, "La Combe Brûlée" in the background is completely devoid of snow. This is the product of a northern exposure in the likes of Les Barreaux vs. the more southerly La Combe Brûlée, which coincidentally translates into "the burnt valley" because it's roasted from the sun. So, as you can see, Les Barreaux is a cool vineyard. Its neighbors towards the bottom of the slope include Cros Parantoux, Aux Brûlée, Petit Monts and Richebourg.
Tonight's wine, a product from this vineyard in 2020, shows how a cool site like Les Barreaux can be advantageous to farm in a warmer vintage. This vintage also proves to be the first for Domaine du Couvent, a winery re-founded with old family vineyard parcels in 2020 by Phillippe Chéron.
Phillippe de-stems and ferments via indigenous yeasts in cement and stainless steel. Elevage is about 15 months in about 20% new oak. In a vintage like 2020 a cooler site like Les Barreaux helps keep freshness preserving acidity.
