Domaine de Triennes is an interesting project. Though its vineyards are in the south of France the property is run by two of Burgundy’s most famous winemakers. Must be a great place to vacation from the cold Burgundian winters! Founded in 1989 the winery had kept and maintained a simple focus, to make wines that they’d like to drink. That means whites that are of elegance and aromatics. For their reds, never heavy. These are simple wines without cosmetics as they say at the winery. By the way, the ‘they’ are the families of Domaine Dujac (Seysses) and Domaine de la Romanee-Conti (de Villaines). So pretty much Burgundian royalty. Their white “Sainte Fleur” is based on a classic style from Condrieu. It is 100% Viognier made in an aromatic style with a rich texture. This is not some want-to-be Chablis. It’s rich, it’s full bodied but, it isn’t flabby. There’s enough freshness to the wine from its stainless-steel fermentation and elevage. It’s intensely fragrant too, as a Viognier should be with lots of honied, white flower aromas. Perhaps only Sauvignon Blanc and Gewurtztraminer are more potent aromatically. Try this with coconut rice paired with a gently cooked protein of your choice like salmon, cod, chicken breast.
