The Chambertin Grand Cru vineyard showcases limestone-rich soils and a fine earth-to-pebble ratio akin to Montrachet, enabling it to produce wines with outstanding aging potential. Damoy’s 1.2-acre northern parcel, planted in 1973, yields Pinot Noir of exceptional refinement, reflecting the vineyard’s terroir-driven elegance.
Grapes, including 30% whole clusters, are cold-soaked to gently extract flavors before fermentation in open vats with hand punchdowns (pigéage). Extended skin contact (cuvaison) softens tannins and enhances complexity, while 14 to 18 months of aging on fine lees, using 30–50% new oak, ensure a balance of richness and purity. By avoiding fining and filtration, Damoy preserves the authenticity of each cuvée, crafting wines that are a true testament to Gevrey-Chambertin’s grand cru terroir.
