Closer to the Pommard side of Volnay Mitans is on a similar elevation to Caillerets. Checking our notes from years past it seems to very consistently show what a 'prototypical' Volnay vineyard should be; soft, fragrant and open. The Lafarges tell us that "This terroir is the first Premier Cru that opens and is very elegant." while noting that many choose to put their portion into a generic Volnay Premier Cru.
One of our most anticipated stops every year is the one we make at Domaine Lafarge. In the heart of Volnay, their cellars date to the 13th century and impart a sense of history that even other venerable cellars cannot.
And then, there are the wines. They are made in a low-tech but detail oriented environment. According to Frederic, there is only about 15% new oak in the entire Domaine. Though some of the older reconditioned barrels look like they could have been subject to a thought experiment similar to “Theseus’ Paradox '' therefore making them new and increasing the percentage on site? That is a debate for another forum...It is safe to say that the wines are traditionally made and little new oak is used.
