This estate has no relation to the Dauvissat you're likely thinking of, but these are worthy of your attention for their quality and pricing. The estate spans over 23 hectares, distributed across seven communes in the Chablis region (La Chapelle Vaupelteigne, Milly, Chablis, Beines, Lignorelles, Villy, and Maligny). The origins of the estate date back to the union of Christiane and Jean, each owning family vineyards in Milly and La Chapelle Vaupelteigne, respectively, in the 1950s. The estate expanded in the 1980s with the arrival of Philippe, Christiane and Jean's son, and now consists of 55 parcels.
"Let the terroir express itself and preserve it" is the guiding principle behind all their actions, from the first cut of the pruning shears to the bottling. With this in mind, they aim for reasonable yields through appropriate pruning, careful disbudding and training, and organic fertilization tailored to the vine's needs.
- They practice organic viticulture, using no herbicides or insecticides since 2011.
- Biodynamic practices have been adopted since 2018, including mulching, soil work, winter cover crops, and bovine compost to maintain soil health.
- Quality starts in the vineyard and is reflected in the cellar. They harvest manually at optimal maturity for healthy, sugar-rich, and aromatic grapes.
- They vinify by parcel or geographical location to express each terroir's unique character, with minimal intervention.
- Fermentations occur with natural yeasts.
"Bas de Fourchaume" is situated below the esteemed Chablis Premier Cru Fourchaume. This lower hillside vineyard enjoys the same South-South/West exposure as the Premier Cru, with a deeper clay-loam soil. The vines, which are 36 years old, produce a yield of 46 hectoliters per hectare on a surface area of 0.54 hectares.
