Champagne Chavost is a unique cooperative-based house located in a tiny village Chavost-Courcourt (pop 334). It's just southwest of Épernay at a confluence of the Côte de Blancs, Montagne de la Reims, and the Vallée de la Marne. Created in 1946, the cooperative takes its name from the ancestral name of the village, Chavost. Following its formation, the cooperative has striven to "grow high-quality grapes for unique wines." Fabian Daviau has taken the cooperative to the next level, insisting on a biodynamic, hands-on approach in the vineyard and at harvest. Conversely, he takes a hands-off approach in the cellars. Fermentations are spontaneous, the musts aren't chaptalized, malo is not inoculated, there is no dosage, and bottling is done without added sulfur.
What we found in this Champagne is unique. By Chavost's own admission, their Champagnes are singular and atypical with their own identity. Well, it's true. Chavost's Blanc d'Assemblage is the house's calling card. It's a Champagne that's simultaneously rich, vibrant, and generous all at once. It's like capturing the best of every Champagne "style" and making it all work in one cuvée. Not many can accomplish such a feat, making this a Champagne that can resonate amongst any enthusiast we believe. Fabian's Blanc d'Assemblage is comprised of 50% Chardonnay and 50% Meunier sourced from the estate's 5 hectares of vineyards in Chavot-Courcourt.
