The wines of Mount Etna are in the spotlight and rightfully so. Nerello Cappuccio, a red grape variety that has been cultivated on Mount Etna for centuries is the focus of this wine. Though it’s often overshadowed by its cousin, Nerello Mascalese, the grape is similarly soft when planted at elevation. Benanti’s vineyards exist between 900 and 2,950 above sea level in the Contrada Cavaliere vineyard on the southwestern slope of Mount Etna! The volcanic soil is sandy, with an abundance of minerals. The vines are up to 30 years old planetd with a density of 6,500-7,000 plants per hectare. The mountainous climate provides dry conditions, good ventilation, tons of sunshine and very significant temperature changes between day and night.
Benanti's grapes are hand-harvesting during and then destemmed within the cellar. Fermentation occurs in stainless steel vats at controlled temperatures, featuring a two-week maceration period, utilizing indigenous yeast strains meticulously chosen from the vineyard by Benanti following years of firsthand experimentation. Following fermentation, the wine exclusively matures in stainless steel for approximately 12 months, followed by an additional 6-month aging period in the bottle.
