Santo Wines, originally established in 1911 under the name Union of Santorini Cooperatives, once served as the representative body for all wineries in Santorini. Presently, it stands as the largest producer within the island's winemaking industry. In 1992, a cutting-edge winery was constructed on the outskirts of Pyrgos village, perched high above sea level (400m). Santo Wines produces high-quality that uphold traditional vinification and viticultural techniques.
Santorini, renowned for its unique viticultural practices, showcases an array of indigenous white grape varieties, notably Assyrtiko, Athiri, and Aidani, while also offering wines crafted from international varietals and indigenous red grapes such as Mandilaria and Mavrotragano. Approximately 1,200 hectares of land are dedicated to vine cultivation on the island. Foremost among these grapes is Assyrtiko, celebrated as the island's flagship variety. Characterized by its high acidity and enriched with citrus and mineral notes, Assyrtiko is a versatile option, suitable for standalone enjoyment or paired with grilled fish and meats.
A distinctive aspect of Santorini's viticulture lies in its immunity to phylloxera, attributed to the volcanic soils lacking the clay that sustains the pest. Many of the island's vine’s roots are centuries old because of this. A bush-training system called "koulara," which entails the weaving of vines into baskets with grapes facing inward is employed across the island. This training shields the vines and grapes from intense winds and sunlight. Interplanting of grape varieties is common, often leading to growers identifying the specific grapes only during the mid-August harvest.
